I ate my first raw oysters in Paris, not long ago. Friends had taken us to their favorite neighborhood wine bar and restaurant, Le Sancerre, on avenue Rapp, where fresh Normandy were a special of the night.
The Normandy oysters were a revelation, and when we returned to New England, I discovered what local oyster-eaters have known for thousands of years—that New England has some of the world's most legendary oyster beds, especially in Wellfleet Bay on Cape Cod. See "The Wellfleet Oyster" gallery page.
These images are part of a larger series called "Consider the Oyster," a nod to MFK Fisher's classic 1941 essay about the "indecisively sexed bivalve."
